I got tired of only clicking in fl studio piano rolls - because i want to input and hear one chord, not just one note- bought a small midi keyboard, that came with ableton live lite.
The various ways you can record and re-record ideas without ever clicking; and not needing to play in real time either, got me hooked.

Fl studio probably has similar features.
TLDR: buy a cheap midi keyboard even if you still mouseclick the notes afterward. Game changer.
Wheter you want to record real instruments, or write/record using piano rolls (virtual sheet music);
check the industry standard softwares.
Demo them for free. Cubase, fl studio, reaper, ableton...
If you are total beginner, pick one, make a one minute super basic song with it, while reading the manual/checking youtube, something simple using that software only, then pick another software, repeat.
Your songs will probably "suck" at the beginning but no worries; its like musculation, you get visible results very fast when you're beginner (and then reach regular milestones/plateaux).
In my opinion, the best and most important choice is to pick something with the easiest workflow for YOU.
Pick the right tool.
Something comfortable to use.
If you dont enjoy navigating the software, you will feel miserable writing tracks.
Fortunately many daws nowadays aren't cumbersome to use, even if they look complex at first.
Yeah raum is my go to reverb as well if i dont need convolution.
Mvp plugin is still Massive X for me. It replaced both massive and fm8 in my case.
I barely use any other synth now, except for drift and phoscyon.

Krita is also free and available on other platforms too so your project files do carry over to them. I liked Pixel Studio as well, but I wasn't so keen on how online-driven their social media side of things were and it was a bit pricey for me to remove things like advertisements (both per-device and per-account, as you have the options for both).

You said you've jammed with many things. Do you have favourites so far? Start with these. Pick two or three of them. Maybe its a piano, a synth, a yukulele, a drum kit, some effect tools.
Use these "instruments" to tell us exactly what you wrote in your opening post, instead of using your voice.
Its the very last thing.
Bring the mix to suitable loudness-es (for cd, streaming etc), make very subtle corrections and optimizations if need be.
Make sure it translates reasonably well, meaning it sound as good as possible in your speakers, headphones, car, crappy phone etc.

To my rookie level, music theory is a handy toolbag for when in doubt. (or when your aging ears start to betray you)
I enjoy adding tools here and there at my own pace. Usually when i pick a virtual instrument. I look what its used for, in which context, but that wont stop me putting some crazy effects on it if i want to^^
I think if you mix hardware and software, you have to make sure the signal isnt clipping at any point in the chain (unless you want that clipping sound)

While they are excellent, most of them (except transient shaper) are kind of redundant for me, as i can create fx racks effortlessly in Ableton, and the stock effects are equally good imho.
The way i see it, its a fantastic self contained synth, with a heavy focus on modular experimentation and creating your own patches. Its racks of effects save you the hassle of doing that in your daw, without all the troubles that external automation curves and complex parrallel fx chain + latency bring.
